I have heard about a hitch lift, what exactly is it and what does it do? I'm guessing it just is a bracket to raise the hitch up a little but what is that for? More ground clearence (the rear diff sits even lower than the hitch), easier to get to in the mud, or easier to tow trailers? Just wondering if I should buy one or if I could see a picture, maybe make one.

If you put a u-joint bustin' lift in the back, you can turn the axle to a point where the hitch is lower than the axle. Still not lower than the differential, but one more thing to drag through the mud.
MHO is that if you see a benefit in raising the hitch, go for it. If you can't see a benefit, then you probably don't need it.
FWIW, I don't believe that a relocated hitch is as strong as a non-relocated one. I doubt you'd break it either way, but if you might use the hitch "ambitiously" on occasion, you should make sure that you need to raise before you consider doing it.
